This traditional Sardinian minestrone brings Mediterranean comfort food straight to your table. The combination of aromatic vegetables, hearty legumes, and Sardinian fregula makes the soup particularly filling and incredibly flavorful.
Perfect for cold days, meal prep, or for anyone who loves Italian cuisine.
Ingredients for 4–6 servings
- 60 g dried fava beans
- 60 g dried white beans
- 60 g dried chickpeas
- 125 g Sardinian fregula
- 1/2 white onion
- 50 g carrots
- 50 g celery stalks
- 1/2 garlic clove
- 1/2 can peeled tomatoes
- 150 g potatoes
- 125 g fennel
- Extra virgin olive oil
- Salt to taste
- Fresh parsley
- Fresh basil
Preparation
1. Prepare the legumes
Soak the fava beans, white beans, and chickpeas in plenty of water overnight.
2. Prepare the vegetables
Dice the onion, carrots, celery, potatoes, and fennel into small cubes. Finely mince the garlic.
3. Sauté the aromatic base
Heat a little extra virgin olive oil in a large pot. Sauté the onion, celery, carrots, and garlic in it for a few minutes until translucent.
4. Add vegetables and tomatoes
Add the potatoes, fennel, and peeled tomatoes and sauté briefly.
5. Cook the legumes
Drain the soaked legumes and add them to the pot. Cover with enough water and let the soup simmer over medium heat until the legumes are soft. Depending on the variety, this will take about 60–90 minutes.
6. Add the fregula
Add the Sardinian fregula to the soup about 10–12 minutes before the end of the cooking time and cook along with the soup.
7. Season and serve
Season the minestrone with salt and garnish with freshly chopped parsley and basil. Drizzle with a little olive oil before serving.
Mahlzeit tip
For even more flavor, you can serve the minestrone with freshly grated Parmesan. Toasted Italian country bread tastes particularly good with it.
