Quick chocolate molten lava cakes

Crispy-baked on the outside and wonderfully soft and chocolatey on the inside – these little chocolate cakes are exactly what you need when the chocolate craving is big, but time is short.

Dark chocolate and butter form the base, while a little strong coffee makes the chocolate flavor even more intense. Baked directly in small ramekins, the cakes are also beautifully easy to serve warm.

Ingredients

  • 2 eggs
  • 2 egg yolks
  • 60 g sugar
  • 2 tbsp hot espresso or strong coffee
  • 150 g dark chocolate
  • 100 g butter
  • 2 tbsp flour
  • a little vanilla
  • 1 pinch of salt
  • a little butter for greasing

Preparation

1. Prepare the molds

Preheat the oven to 175 °C (347 °F) top/bottom heat. Thoroughly grease small ovenproof ramekins or soufflé dishes with butter.

2. Whisk the eggs

Place eggs, egg yolks, sugar, vanilla, and a pinch of salt in a bowl. Whisk for a few minutes until the mixture has become significantly lighter and creamier.

Slowly stir in the hot espresso.

3. Melt the chocolate

Coarsely chop the dark chocolate and melt it carefully with the butter over low heat. Stir regularly and then let cool briefly.

4. Finish the batter

Gradually fold the chocolate-butter mixture into the egg cream. Finally, add the flour and fold in only until a uniform chocolate batter has formed.

5. Fill the molds

Distribute the batter evenly among the prepared ramekins. Do not fill the molds quite to the rim, as the cakes will rise slightly during baking.

6. Bake briefly

Bake the chocolate cakes in the preheated oven for about 10–15 minutes. For a molten center, the edges should be firm while the middle should still wobble slightly when the mold is moved.

If you prefer the cakes fully baked through, leave them in the oven for a few minutes longer.

7. Enjoy warm

Let the chocolate cakes rest briefly and serve warm directly from the ramekins.

Mahlzeit tip

The exact baking time depends heavily on the size and material of the molds. For the perfect molten center, it is therefore worth checking the first cake after just 10 minutes.

These go perfectly with fresh raspberries or strawberries, a scoop of vanilla ice cream, or simply a dusting of powdered sugar.
